The grapes are harvested and selected from the winery's own old vineyards which are over 100 years old. American oak barrels are used for the fermentation and the wine is macerated with the grape skins for 10 days. Oak barrels are then used for the malolactic fermentation with the lees. Oak ageing is carried out for 6 months in the same oak barrels.
