From a centennial ecological and biodynamic vineyards "La Hontanilla" and "El Carasol". The grapes are harvested by hand and put into 25 kg crates. The juice is left to macerate with its skins for 1 day. The grapes are fermented by stirring its lees in 500-litre French oak barrels. Oak ageing is carried out for 11 months inside the same oak barrels. Minimum rest for 24 months in the bottle.
Colour: Pale yellow.
Aroma: Fresh herb, anise, leather, white pepper, thyme and rosemary.
Taste: Mild acidity well integrated with the skins of the ripe fruit. Balanced, deep and persistent.
